The precise delimitation of municipal borders, the varieties used, the established cultural practices, transformation conditions, vine-growing, vinification methods and yield delimitation are the tools the Wine Standards Board counts on in order to guarantee the fact that our wines are, according to the autonomous region’s legislation, “QUALITY WINES PRODUCED IN A SPECIFIC REGION”. For that reason, the joint effort of both wineries and the Wine Standards Board is what enables us to know and demonstrate that a wine, when granted with the back label of the Appellation of Origin and its unique number, offers us a data record which determines what it is, what it is made of and the fact that it has definitely been submitted to a traceability control
The stages that assure traceability commence at the harvest, when the Board’s inspectors, called “observers” assume control of verifying, day by day, the grape input by the registered vine growers to the wineries .They also keep track of the tanks as they fill up daily, the methods applied and the final storage.
Every vine grower must give the winery detailed information on where, which exact area and plot of land, the grapes destined to wine-making were grown.
